    According to the United States Agency for International Development, USAID, “if stored properly in a cool, dry place, they have a minimum shelf life of one year, keeping indefinitely and withstanding harsh or tropical environments.” Time alone won’t make beans go bad, per se, but they certainly won’t taste the same. After 2 3 years, the beans will start losing their nutritional value, and most naturally found vitamins will be gone within 5 years.

  2. In my bag of lentils I found a couple that had a raised, dark brown crusty looking edge, with a while spot/hole in the middle. What do you think it might be? OK to use, or throw them out..? I do have a photo.

    1. When in doubt, throw it out. The good thing about lentils is that it’s easy to toss out the bad ones. You don’t have to throw away the whole bag because of a few bad lentils.

      You mentioned “a couple.” So I would just dispose of the questionable ones. However, if it were a matter of half the bag being that way, then I’d throw it away.

  3. This was very helpful And communicates better than anything else I found regarding expiry of lentils. I haven’t enjoyed lentils in the past and yet I’m frugal and health conscious and intend to put them into my diet, lectins and all. Mine have been stored in airtight cool area containers and look great when I am inspecting them year by ear. I’m sure I have some about 12 years old. I suppose I should be composting those …but if they can keep indefinitely, maybe I’ll try cooking first and then compost if necessary. Probably using very old lentils is not the best way to build a taste for lentils.
